Pond Paddock 2006 Harvest Moon Riesling

Our 2006 Riesling was hand picked on April 4th at 17.8 brix and is made from two different clones, 110 and Barnsley. The fruit was whole bunch pressed with the aid of pectic enzymes to aid juice extraction and clarification. The fermentation was done at 12 to 15C to ensure maximum retention of aroma and flavour compounds. Rapid post fermentation clarification and stabilization ensured maximum fresh fruit character getting to bottle.

Tasting notes;
 
Ripe lime, apples and pear characters dominate the nose, with a myriad of flavours on the palate. Almost dry at 7g/l, this wine has a sweetness coming through from the alcohol and the ripe fruit characters. An enigmatic mineral character seems to hold the wine together as a whole.
