Pond Paddock 2007 Harvest Moon Riesling
Our 2007 Riesling was made from two different clones, 110 and Barnsley. The fruit was picked on April 4th at 17.5 brix then whole bunch pressed with the aid of pectic enzymes to aid juice extraction and clarification. The fermentation was done at 12 to 15C to ensure maximum retention of aroma and flavour compounds. Rapid post fermentation clarification and stabilization ensured maximum fresh fruit character getting to bottle.

Tasting notes;
Ripe lime, apples and pear characters dominate the nose, with a myriad of flavours on the palate. At 13g/l, this wine has a sweetness coming through from the alcohol and the ripe fruit characters. An enigmatic mineral character seems to hold the wine together as a whole.
