| Pond Paddock 2007 Te Muna Pinot Noir Our 2007 pinot noir fruit was hand picked between April 12 and 23 at an average of 24.5 brix, then 100% destemmed into 4 small open fermenters. We used 4 clones for this wine: Abel, 667, 114, and 5. The average time for the total fermentation period was 24 days, including a 6 day cold soak period. The ferments were hand plunged and then gently basket pressed into French oak. {30% new} and left for 11 months before bottling. Alcohol: 13.8% PH: 3.6 TA: 6 Awards; Silver medals at both the 2008 Air New Zealand and NZ International Wine Shows. Tasting notes: Lovely, genuine pinot noir colour, quite rich and more darkly concentrated than most Burgundian Pinot Noir. The nose is delightful, followed by sweet raspberry and soft fruit, balanced and quite elegant. A lovely palate, nicely spicy balanced by some attractive fruit. Rustic tannins that hold on to the fruit flavours into a good lengthy finish. Please enjoy our wine, Jeff Barber, Winemaker and Viticulturist.
